Chicken and Rice

Makes 6 servings · ~485 calories per serving (estimated) · 17 min prep · 45 min cook

Ingredients

  • 3–4 boneless chicken breasts
  • 1 cup uncooked rice
  • 1 can cream of chicken
  • 1/2 small onion (chopped)
  • 2 garlic pods (minced)
  • 1/2 cup chicken broth
  • 1/2 stick butter (sliced)
  • Salt and pepper to taste
  • 1 pk ranch seasoning (or 2 tbsp homemade seasoning)

Instructions

  1. Mix together rice, cream of chicken, onion, garlic, chicken broth, 1/2 of the ranch seasoning, and salt & pepper.
  2. Cube 1 chicken breast into the rice mixture and mix well.
  3. Place the other chicken breast on top of the rice mixture.
  4. Sprinkle ranch seasoning over the chicken breast.
  5. Place slices of butter on top of the chicken breast.
  6. Cover and bake at 375° for 45 mins.
