Chocolate Pecan Cobbler
Makes 16 servings · ~770 calories per serving (estimated) · 19 min prep · 42 min cook
Ingredients
- 2 pie crusts, softened
- 2 1/2 cups brown sugar
- 2 1/2 cups light corn syrup
- 1/2 cup melted butter
- 4 1/2 tsp vanilla
- 2 cups chopped pecans
- 2 cups halved pecans
- 4 eggs
- 1 bag milk chocolate chips
- Vanilla ice cream
Instructions
- Preheat the oven to 350°F and press one softened pie crust into the bottom of a greased 9x13 baking dish.
- In a large bowl, whisk together the brown sugar, corn syrup, melted butter, vanilla, and eggs until smooth.
- Stir in the chopped pecans and chocolate chips.
- Pour the filling over the crust in the dish.
- Cut the second pie crust into strips, lay them over the top, and scatter the halved pecans on top.
- Bake at 350°F for 40–45 minutes, until the center is set and the top is golden; tent loosely with foil if it browns too quickly.
- Let cool slightly and serve warm with a scoop of vanilla ice cream.
