Chocolate Pecan Cobbler

Makes 16 servings · ~770 calories per serving (estimated) · 19 min prep · 42 min cook

Ingredients

  • 2 pie crusts, softened
  • 2 1/2 cups brown sugar
  • 2 1/2 cups light corn syrup
  • 1/2 cup melted butter
  • 4 1/2 tsp vanilla
  • 2 cups chopped pecans
  • 2 cups halved pecans
  • 4 eggs
  • 1 bag milk chocolate chips
  • Vanilla ice cream

Instructions

  1. Preheat the oven to 350°F and press one softened pie crust into the bottom of a greased 9x13 baking dish.
  2. In a large bowl, whisk together the brown sugar, corn syrup, melted butter, vanilla, and eggs until smooth.
  3. Stir in the chopped pecans and chocolate chips.
  4. Pour the filling over the crust in the dish.
  5. Cut the second pie crust into strips, lay them over the top, and scatter the halved pecans on top.
  6. Bake at 350°F for 40–45 minutes, until the center is set and the top is golden; tent loosely with foil if it browns too quickly.
  7. Let cool slightly and serve warm with a scoop of vanilla ice cream.
