Homemade Blueberry Muffins

Makes 12 muffins · ~220 calories per serving (estimated) · 17 min prep · 22 min cook

Ingredients

  • 2 cups all-purpose flour
  • 2/3 cups sugar
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 8 tablespoons butter, melted (1 stick)
  • 2 eggs
  • 1 cup blueberries
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 400°F.
  2. Butter muffin pans.
  3. In a bowl, stir and toss together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, whisk together the milk, butter, and eggs until smooth. Add the blueberries and stir until evenly incorporated.
  5. Spoon the batter into the prepared muffin cups, filling each about 3/4 full. Bake until a toothpick comes out clean, 15 to 20 mins.
  6. Let cool for 5 mins.
