Homemade Blueberry Muffins
Ingredients
- 2 cups all-purpose flour
- 2/3 cups sugar
- 2 1/2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1 cup milk
- 8 tablespoons butter, melted (1 stick)
- 2 eggs
- 1 cup blueberries
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 400°F.
- Butter muffin pans.
- In a bowl, stir and toss together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
- In another bowl, whisk together the milk, butter, and eggs until smooth. Add the blueberries and stir until evenly incorporated.
- Spoon the batter into the prepared muffin cups, filling each about 3/4 full. Bake until a toothpick comes out clean, 15 to 20 mins.
- Let cool for 5 mins.
