Homemade Yeast Dinner Rolls

Homemade Yeast Dinner Rolls

Ingredients

  • 1 1/2 cup whole milk, 110°F
  • 4 Tbsp unsalted butter, melted
  • 1 Tbsp active dry yeast
  • 1/3 cup granulated sugar
  • 1 1/4 tsp salt
  • 4 cups all-purpose flour
  • 1 Tbsp butter, melted (to brush the tops when they come out of the oven)
  • 1/2 tsp kosher salt (to sprinkle finished rolls)

Instructions

  1. In the mixing bowl of your stand mixer, mix together the warm milk and 1 Tbsp sugar. Sprinkle the top with 1 Tbsp yeast and let sit 1 min. Whisk together and let sit for 5 mins.
  2. Add 4 Tbsp melted butter, the remaining sugar, and salt.
  3. Add flour a half cup at a time, whisking to incorporate.
  4. Once the dough gets too thick, switch to the dough hook attachment and mix on speed 2.
  5. The dough should feel sticky and tacky but should not stick to clean fingers.
  6. Knead the dough with the dough hook for 2 mins, or 10 mins by hand.
  7. Add to an oiled bowl and cover with plastic wrap.
  8. Wet a washcloth and squeeze all the water out, put in the microwave for 1 min.
  9. Add the covered bowl to the microwave with the wet washcloth and leave for 2 hours.
  10. Once the dough has doubled in size, turn out onto a lightly floured surface.
  11. Cut into 15–24 even pieces and roll each piece into a ball.
  12. Cover the baking dish with plastic wrap and let rise for 40 mins. (Do the washcloth in the microwave again.)
  13. Bake at 375°F for 23–25 mins.
  14. Top with butter & salt.
