Keto Chocolate-Peanut Cups

Keto Chocolate-Peanut Cups

Ingredients

  • 1 cup coconut oil
  • 1/2 cup natural peanut butter
  • 2 tablespoon heavy cream
  • 1 tablespoon cocoa powder
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1 ounce peanuts, chopped

Instructions

  1. Melt coconut oil in a saucepan over low, 3–5 mins. Stir in peanut butter until smooth. Whisk in heavy cream, cocoa powder, vanilla extract, and salt.
  2. Pour mixture into 12 silicone muffin molds, or use cupcake papers covered in plastic wrap.
  3. Freeze mixture for 1 hr or until firm. Store in an airtight container or ziploc.
