Loaded Potato Soup

Makes 8 servings · ~285 calories per serving (estimated) · 9 min prep · 7 hr cook

Ingredients

  • 5–6 baking potatoes (peeled & chopped)
  • 1/2 onion, chopped
  • 1 tsp thyme
  • 3 tsp minced garlic
  • 3 cups chicken stock (broth)
  • 5–6 bacon (cooked & chopped)
  • 1/2 cup heavy cream
  • 1 cup cheddar cheese
  • 2/3 to 1/2 cup sour cream
  • Salt & pepper (to taste)

Instructions

  1. Put potatoes, onion, thyme, chicken stock, and bacon in a slow cooker and cook until potatoes are soft, about 3 hours (may take longer; 3–5 hours).
  2. Then add heavy cream, cheese, sour cream, and salt & pepper.
