Loaded Potato Soup
Makes 8 servings · ~285 calories per serving (estimated) · 9 min prep · 7 hr cook
Ingredients
- 5–6 baking potatoes (peeled & chopped)
- 1/2 onion, chopped
- 1 tsp thyme
- 3 tsp minced garlic
- 3 cups chicken stock (broth)
- 5–6 bacon (cooked & chopped)
- 1/2 cup heavy cream
- 1 cup cheddar cheese
- 2/3 to 1/2 cup sour cream
- Salt & pepper (to taste)
Instructions
- Put potatoes, onion, thyme, chicken stock, and bacon in a slow cooker and cook until potatoes are soft, about 3 hours (may take longer; 3–5 hours).
- Then add heavy cream, cheese, sour cream, and salt & pepper.
