Low Carb Meatballs

Makes 8 servings · ~510 calories per serving (estimated) · 21 min prep · 42 min cook

Ingredients

  • Meatballs: 2 lbs of ground meat
  • Meatballs: 1 cup shredded mozzarella
  • Meatballs: 1/3 cup shredded parmesan
  • Meatballs: 2 eggs
  • Meatballs: 2 tsp onion powder
  • Meatballs: 2 tsp garlic powder
  • Meatballs: 2 tsp basil
  • Meatballs: 1 tsp salt
  • Sauce: 15 oz tomato sauce
  • Sauce: 1 tsp onion powder
  • Sauce: 1 tsp garlic powder
  • Sauce: 1 tsp basil
  • Sauce: 1 tsp parsley
  • Sauce: 1 tsp oregano
  • Sauce: 1 tsp salt
  • Sauce: 1/2 tsp pepper
  • Sauce: 1/3 cup parmesan
  • Sauce: 8 oz shredded mozzarella

Instructions

  1. Preheat oven to 400°F.
  2. Spray casserole dish with cooking spray.
  3. Combine all meatball ingredients.
  4. Make about 24 meatballs.
  5. Bake for 30 mins or until meatballs are cooked through.
  6. Drain liquid from the casserole dish.
  7. Top with sauce and cheese.
  8. Bake for an additional 10–15 mins or until cheese is melted.
