Makes 8 servings · ~600 calories per serving (estimated) · 15 min prep · 25 min cook

Ingredients

  • 1 pound ground beef
  • 1 can mixed chili beans
  • 1 bag tortilla chips, crushed
  • 1 can Ro-Tel
  • 1 small onion, chopped
  • 2 cups shredded cheese, divided
  • 1 can nacho cheese (15 oz can)
  • 1 pack taco seasoning (2 tbsp)
  • 1 can cream of chicken
  • 1/2 cup water

Instructions

  1. Preheat oven to 325°F.
  2. In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup, and water. Simmer over med-low heat until everything is well combined and heated throughout.
  3. Grease a 9x13 dish.
  4. Put down a layer of crushed tortilla chips, followed by a layer of meat mixture, then 1 cup shredded cheese and 1/2 can of nacho cheese, and repeat.
  5. Cover with foil and bake 20–30 mins.
