A tried-and-true family favorite from Becky's own recipe collection. Here's everything you need to make Mexican Casserole at home.
Mexican Casserole
Ingredients
- 1 pound ground beef
- 1 can mixed chili beans
- 1 bag tortilla chips, crushed
- 1 can Ro-Tel
- 1 small onion, chopped
- 2 cups shredded cheese, divided
- 1 can nacho cheese (15 oz can)
- 1 pack taco seasoning (2 tbsp)
- 1 can cream of chicken
- 1/2 cup water
Instructions
- Preheat oven to 325°F.
- In a large skillet, brown meat and drain off fat. Stir in beans, tomatoes, onion, taco seasoning, soup, and water. Simmer over med-low heat until everything is well combined and heated throughout.
- Grease a 9x13 dish.
- Put down a layer of crushed tortilla chips, followed by a layer of meat mixture, then 1 cup shredded cheese and 1/2 can of nacho cheese, and repeat.
- Cover with foil and bake 20–30 mins.
