Sausage Gumbo

A tried-and-true family favorite from Becky's own recipe collection. Here's everything you need to make Sausage Gumbo at home.

Sausage Gumbo

Sausage Gumbo

Makes 8 servings · ~210 calories per serving (estimated) · 21 min prep · 4.2 hr cook

Ingredients

  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper
  • 1/4 tsp mustard powder
  • 1/2 tsp gumbo filé
  • 1/4 cup veggie oil
  • 1/4 cup flour
  • 2 packs sausage
  • 1 red onion, chopped
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeño pepper, seeded & diced
  • 3 cloves garlic
  • 1/2 cup white wine
  • 1 1/4 cups tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 bay leaves
  • 2 tbsp fresh parsley, chopped
  • 2 cups white rice, cooked
  • 1 1/2 cup chicken broth
  • 2 green onions, finely chopped

Instructions

  1. Stir together salt, pepper, paprika, thyme, cayenne, and mustard powder. Set aside.
  2. Add oil to a pan and heat up for 1 min. Stir in flour, stirring frequently for 10–12 mins until dark brown.
  3. Stir in sausage, onion, celery, red bell pepper, jalapeño, garlic, and the spice mixture.
  4. Slowly whisk in wine & broth until blended.
  5. Stir in tomato paste, Worcestershire sauce, and bay leaves.
  6. Cook for 4 hours.
  7. Remove bay leaves.
  8. Stir in green onions, parsley, and gumbo filé. Serve over cooked white rice.
